This tea can also be called Tung Ting. The growing region surrounding Dong Ding Mountain in Taiwan produces some of the world’s most sought-after oolongs. This region became famous for slowly baking tealeaves at high temperatures, which imparts a sweet, richness by gradually caramelizing the natural sugars in the leaf. This “medium roast” Dong Ding offers toasty notes of Brazil nuts, a rustic, French-bakery aroma and a long, pleasant finish. Because plants grow slowly in high elevations, the leaf is more concentrated with minerals and phytonutrients.
